1. Spicy Sardines

Ingredients
  • 2 Tbsp cooking oil
  • One onion - thinly sliced
  • 2 Roma tomatoes - diced
  • 2 red Thai chili peppers
  • Salt and pepper to taste

Heat the skillet with cooking oil, add the finely chopped onions and saute till they are soft.

Add the tomatoes and chili and cook until they are soft.

1. Avocado Tuna Salad

Ingredients
  • Canned tuna
  • Avocado
  • Apple
  • Celery
  • Red onion
  • Dijon
  • Walnuts
  • Pickle juice
  • Cumin
  • Salt and pepper

Mash up the avocado in a large bowl

Add canned tuna, red onion, apple, walnuts, celery and mix well

1. Mackerel Patties

Ingredients
  • Canned Mackerel in Brine (15 oz)
  • Two eggs
  • vegetable oil for frying
  • 1/4 cup of grated Parmesan cheese
  • 1/2 cup of breadcrumbs
  • 2 tbsp. of mustard
  • 2 tbsp. of mayonnaise
  • 2 tbsp. of chopped chives or scallion

Firstly, drain the Mackerel, debone it, and add it to a mixing bowl. Now flake the mackerel meat with pork.

Add all the ingredients, excluding vegetable oil, and mix well.

Shape it into patties using ¼ cup as a measure

Start by frying the mackerel patties in a small amount of vegetable oil until it turns golden brown.
